Description
Saffron (Crocus Sativus) is perhaps the world's most exotic spice. it is the "secret ingredient" for many of southern Europe's classic dishes. It takes about 150,000 flowers to harvest a single kilo of saffron!
Saffron should be lightly toasted and ground before being add to a dish. To toast, fold the stigmas in a small piece of paper and place on the lid of a pot of boiling water for approximately 2 minutes. Once toasted, the saffron should be brittle enough to crush between your fingers. Crush the saffron or grind it with a pestle and mortar and then add to your dish. Alternately, steep the saffron in a bowl of boiling water for several minutes, remove the stigmas and add the liquid to your dish.
It is recommended that you use saffron very sparingly. 1/10 of one gram should be enough to flavour one serving.
