La farine de sarrasin est une farine fabriquée exclusivement à partir de sarrasin cultivé au Canada (Québec, Ontario et Nouveau-Brunswick). Farine grise de style campagnard, finement constellée de points noirs. Ingrédient traditionnel des crêpes et de la galette de sarrasin classique. Une des farines les plus saines, grâce à la présence de rutine, un flavonoïde aux propriétés antioxydantes.
