It’s not news to us that the modern North American diet is typically quite imbalanced in several areas and fat ingestion is no different.  As a population, we are eating too much trans fat, saturated fat and we’re consistently consuming far more omega 6 compared to Omega 3.  The ratios can be as high as 10:1 in favour of omega 6 in some cases.  If we were to reference our ancestors as a cue to a more optimal balance, then ratios would look more like 2:1 or 1:1. That’s a significant difference.

The human body contains approximately 37 trillion cells.  Each of these cells has a cell membrane mostly composed of phospholipids (fats).  This cell membrane acts as a highly regulated gatekeeper that controls what enters and exits the cell and it helps cells communicate with other cells.  The quality of this membrane is imperative to healthy cell function.  We are what we eat, and our cell membranes obtain their fats from what we supply in our diet.   If you’re ingesting excessive omega 6, saturated fats and trans fats then membranes will become inflexible and rigid.  The cell then becomes structurally and functionally compromised.  If your cells are unhealthy then so are you.  It’s a slippery slope from there to feeling unwell and eventually disease.
