In Sri Lanka there are two kinds of ginger: small (about 1/2 inch in diameter) and regular (1 inch diameter). Kurundu's ginger powder is auyrvedic ginger that has been ground down into a fine consistency that is perfect for cooking and baking with.
Ginger is the rhizome of the plant Zingiber officinale and is consumed as a delicacy, medicine, or spice. It lends its name to its genus and family (Zingiberaceae). Other notable members of this plant family are turmeric, cardamom, and galangal.
