A Healthy, Kid-Approved Favorite
These Farm Girl lemon muffins have become a staple in our home. I love that they’re a healthier option and packed with protein, so I feel good about serving them to my kids. I usually make a batch ahead of time and keep them in the freezer—they’re perfect for a quick snack or alongside breakfast (my kids love them with their Farm Girl cereal in the morning).
They warm up beautifully, especially with a little butter. I also like to add the juice of one lemon and some extra lemon zest to the mix, which really brightens the flavour. My kids enjoy them even more with that extra fresh, zesty touch!

When life gives you lemons, make this!
It's so nice to find a low carb, gluten free, dairy free product that covers all the bases. In terms of a gluten free bread or baking mix, its almost impossibly to find something like this, which is a relief in a sea of rice mixes. This tasty lemon mix fits perfect for my dietary restrictions and is easy to make. I love lemon and added extra lemon zest to the mix. You won't be disappointed.
