Makes a small amount, not reliable
Just giving some first hand experience after making them today. First, they don't make 8 full size cupcakes like the package says. I had enough batter for 6, so I have doubts it would make a 9 inch cake as advertised. I mixed them for several minutes before baking, but all the erythritol and oil sank to the bottom of the cupcakes during the baking process and left a gelatinous layer that is overly sweet and unpleasant in texture. They puffed up quite high while baking and I had high hopes I'd have six beautiful cupcakes, but shortly after cooling they fell flat and are now about 1.5 inches thick. It's a shame, because the idea is really good and it's less expensive to buy a mix than buy several types of gf flour to make something from scratch. However, given the price and the fact that it isn't reliable like a regular cake mix, I would never purchase it again.
