Cassava is a starchy tuber similar to a potato. The cassava root is plucked from the ground. The roots are then washed, peeled, inspected and grounded into a fine flour while allowing time for drying.
This is a nice, 2-pound resealable bag. Great value and quality for those who use a lot of the stuff! Batch tested and verified gluten free and Vegan

I am autoimmune and must eat a gluten free diet. I have been using another brand of Cassava flour and decided to try Anthony's is less expensive. The flour I received is a completely different colour and texture to regular Cassava flour and I had a flare up reaction to it so it must contain gluten. I did some research and saw others review this saying that from Dec 2018 this flour had changed and they too were getting gluten reactions. The other thing that is suspect is that their labelling is not certified. The do not have the the official labels that other products do for gluten free and GMO free foods. If you are allergic or sensitive to gluten I do not recommend that you buy this flour.

I'm really happy with this brand. It's more affordable than the other popular cassava flour brand I was buying and I like the taste better! This is my new favourite.

Generally I have use another brand of Cassava flour but this one is certainly comparable in taste and texture. The price is much easier to manage.
