I enjoy millet for the flavour and texture it gives baked goods, especially muffins turn out very nice with millet mixed with tapioca, corn or potato starch.

Miller is such a great GF flour. I usually mix it with some of the lighter starches or rice flours, as millet is higher in nutrition and protein but also more dense. It's often hard to find. So great to buy it here reliably!
