Rated 5 out of 5 by from Great whole grain flour for GF breads I use millet (along with sorghum, tapioca, potato starch, and sometimes oat flour/teff flour/buckwheat flour) for my GF breads. It complements sorghum especially well in GF breads. I do find bread can taste pasty if it is more than 25% of the flour mix, but in the right proportion, it is very nice.
