Best cake mix
One of my favorite go-to cake mixes. Always turns out amazing. My tips for the perfect cake: 1) Whip eggs until thick and fluffy. 2) Use coconut milk instead of water and add 2 extra egg yolks OR 1/4 cup sour cream if not dairy-free. The extra fat from the coconut milk and yolks will add richness to the cake. 3) Add dark chocolate chips to the batter, because why not? 4) Lower the baking time by at least 5 minutes so it doesn't get too dry. 5) Add 2-3 tablespoons of freshly brewed coffee to amplify the chocolate flavor.
It turns out PERFECT every time, super light and fluffy. I always get compliments on this cake, no one would ever know that it's gluten and dairy free, let alone paleo! A bit pricey but so worth it as an occasional treat.
