Bob's Red Mill Vital Wheat Gluten is made from the natural protein found in the endosperm of the wheat berry. When combined with water it become highly elastic. Added to bread dough, it helps retain the gas ans steam from baking and gives more volume to the baked break. It can be especially helpful for baking breads made with coarse, whole grain flours and cereals.

Bob's Red Mill Vital Wheat Gluten is 75 to 80% protein. Add about one tablespoon per cup of flour in your bread recipe to improve texture and elasticity and help your bread rise.

Nothing beats Bob's Red Mill. We once bought another brands gluten and boy did our breads suffer for it. This gluten's great for adding extra umph and texture to our whole grain breads. Recommended for those using bread machines for whole grain baking.

Use this to make seitan (a.k.a. wheat meat, mock meat). You can make veggie ribs, veggie shrimp, you name it! Be sure to buy nutritional yeast as well

I add this to my bread machine recipes, especially whole wheat ones, and it makes a big difference in the texture. I't less dense and the bread seems to stay fresh for longer. It is also a essential ingredients in making delicious saitan (vegan mock meat) The only reason I dont' give it 5 starts is because of the price.
