Bob's Red Mill Vital Wheat Gluten is made from the natural protein found in the endosperm of the wheat berry. When combined with water it become highly elastic. Added to bread dough, it helps retain the gas and steam from baking and gives more volume to the baked break. It can be especially helpful for baking breads made with coarse, whole grain flours and cereals.

TL;DR- only purchase if you like a mess all over your order.
The product itself is good, however due to existing air being in the bag, when it is put in with other items it ruptures and the wonderful sticky gluten flour ends up enveloping everything. Nothing quite like the fun of opening up your box and a flour cloud puffs out all over your kitchen!
After cleaning that up, I had to wash every item in there... and it ruined the packaging on a few of them. In spite of bring dry, gluten flour really manages to be quite sticky and does not just brush off.

I have used a few bags. Liked it.
To be honest, this is the only brand I have tried, so I can't say comparison. But I am very happy with this product. It adds texture to my bread especially when I use whole wheat flour.
