First experience and happy with it!
This is the first time I use teff, so I don't have anything to compare it to, but it worked well as a mix with regular flour to make injera.

Although normally good, the batch I got this time makes "gritty" porridge
I had given this flour a 5 star before because I like it. But then I got a batch that is "gritty" --- this is not the first time; I have experienced this problem before. Maybe a pebble was crushed in the mill --- a quality control issue. When I bought a bad batch before, I didn't ask for refund from Well.ca. I 'll know if this problem turns up in the next package that I'll open this week --- then I'll have no choice than to ask for refund.

Nutritious flour for GF breads
Teff flour is quite heavy for baking, so I usually use only about 1/2 cup per recipe. But it adds great nutrition and a hearty taste to breads. My favourite way to use teff flour is in nut & seed crackers. Because it is an expensive flour, it is good that one doesn't need a lot per recipe for it to contribute to a lovely result. I love it when well.ca has sales on Bob's GF products!
