Description
Cape Herb & Spice Butter Chicken Curry Spice is a great meal solution that makes up to 2 meals!

What you’ll need:
  • 1 large onion, diced
  • 2 tbsp Cape Herb & Spice Butter Chicken
  • 800g chicken breast, cubed (mini fillets or deboned thighs offer best results)
  • 2 tbsp tomato paste
  • 1 tin whole peeled tomatoes
  • 125mL fresh cream
  • Handful fresh coriander leaves, well rinsed, de-stemmed and chopped
Optional: cashew nuts, chopped and roasted

Directions:
  1. Saute the onion and spice mix in butter for about 4 minutes, stirring constantly.
  2. Add the chicken together with the tomato paste and saute for a further 5 minutes.
  3. Stir in the ret of the tomato, turn down the heat and simmer gently for 10-15 minutes.
  4. Remove from the heat and add the cream, mixing together well.
  5. Serve immediately on a bed of basmati rice, sprinkled generously with coriander and *cashew nuts.
