What are Tigernuts?
Contrary to their name and taste, tigernuts are not nuts (good news for those with allergies!) – they are tubers that grow low to the ground. Besides being one of nature’s richest sources of fibre (41%!), they are also rich in phosphorous, potassium, Vitamin E and C, and are a valuable source of easily digested protein, carbohydrates and essential iron. High fibre foods help to hold out hunger – great for those watching their weight, or people on the move!

Use: Add it to your smoothie, muesli, or yoghurt. Use it as a substitute for nuts when baking cakes or bread for an added rich, almond-like flavour. It can also be enjoyed simply by adding 2-3 tablespoons with water, fruit juice, or milk (about 200 ml).

Tigernut flour has changed my gluten-free baking forever! Has a slight sweet taste in Focaccia (rises like wheat flour!) which is our go-to bread as a treat. Mixed with almond, arrowroot and coconut flours it makes a great puffy "flatbread" and pizza crust---say goodbye cauliflower!

I'm in total love with this flour! it's gluten free, nut and grain free. Low carb too. A plus there. Now, the amazing part about it is the fact that, used as 1/4 to 1/3 of the gluten-free flour baking mix, it will magically fluff up the dough, the end result being a moist and "gluteny" baked dessert with a divine yet subtle nutty taste, that will fool the gluten eaters into second helpings! Also, contrary to gluten free baked stuff, your tiger nut mix recipe will stay this way up to a few days.

Tiger nut flour makes a great change or addition to other gluten free flours such as almond flour. I use both tiger nut & almond in roughly equal amounts....great product.

I like the taste of this flour very much. It is finely ground and not gritty in texture. So far, I have tried it in banana bread and in peanut butter cookies, and they were both delicious!
