Weirdly flat, which impacts texture
Unlike other soba noodles I've cooked with, these have a cross-section that's almost flat (rather than square-ish). Since soba noodles are relatively thin to begin with, making them even finer in one dimension gives a different end texture that just works oddly in dishes where I typically would use them. The quality otherwise seems fine but I will probably buy a different brand in the future.

My least favourite item in many years
These buckwheat noodles turned into a clump of sticky mess which was inedible, the water turning to an ugly brown colour. Threw the rest out

Excellent Product
I'm so glad these are available through online ordering! I used to get them at a local healthfood store but that store closed, so I'm very pleased to be able to get this gluten-free product at Well.ca. :)
