Former gluten-eater, these were disappointing
I've only tried these as waffles so I will update if my opinion changes...but as someone who ate gluten up until recently, these were incredibly disappointing for being so well reviewed. Both times my waffles turned out dry and slightly mealy and most disappointingly, without any crispiness, even with the use of copious oil on the waffle iron. There was some flavour in this mix (I made homemade waffles when i could still eat gluten, but pre-made mixes tend to not have a lot of flavour), but I found it to be far too eggy. I made half batches which makes two perfect waffles, and both times, I only finished one waffle because I had no desire to waste calories on a second :( I will update if pancakes prove to be better.

Former gluten-eater, these are okay
This is an update to my earlier review. I now only make these as pancakes and I enjoy them that way. Two stars was very generous for how incredibly dry, mealy and eggy they were as waffles with the instructions given. I'm still only adding one star because I need to alter the recipe provided on the packaging to make them palatable to me. I use milk/oat milk instead of water- this is a necessary adjustment IMO, and I add MORE liquid than the recipe suggests-maybe an extra tbsp per 1/3 cup, because the mix is way too dry and stodgy without the added moisture. I also use a flax egg instead because I find the taste of a real egg really overpowers this mix, and flax eggs are easier to make in smaller portions. Finally, I always need to add an extra 1/4 tsp of baking powder with every 1/3 cup of mix or else I don't get enough rise and the mix doesn't achieve the right cooked texture. After all that, the mix is no longer mealy or dry and tastes like a 4/5 stars. With the added moisture, it fries up beautifully, though you still need to be generous with the oil.

My favourite store-bought GF mix
This is such a versatile product. It makes lovely pancakes and also muffins, cakes, soda bread and more. Lots of recipes on their website. Also perfect GF flour to take when travelling.
