Bob's Red Mill is the best
It's a challenge to find Vital Wheat Gluten in the stores and, for those of us on a vegatarian or vegan diet, this product is necessary to make "seitan" aka "wheat meat" based recipes. Once open, I store the package in the freezer and it will "keep" for many months.

I was surprised to find this at Well.ca. Also pleased since delivery from them is excellent. The gluten flower is a welcome addition to my rye bread dough. It assists the rise and adds texture to the crumb
