Kurundu cloves are Fair Trade, certified organic and grown in Sri Lanka. As a legacy of colonization, spice growers are still poorly paid. The clove tree is an evergreen that grows to a height ranging from 8–12 m. Its flowers never have a chance to develop in trees grown for commercial purposes. The spice is the unopened flower buds. The flower buds are at first a pale colour and gradually become green. When they develop into a bright red they are ready for collecting. Cloves are harvested when 1.5–2 cm long.
