My kind of ginger cookie.
These are the best and closest to homemade gluten free ginger snaps I've eaten. The candied ginger makes an excellent contrast to the crispy buttery cookie.

these have a very mild ginger flavour, and chewy pieces of ginger candy in the cookie that I wasn't expecting — much sweeter than anticipated.

Very Tasty
